I am having a service agency scan an organic shaped object for me to make production drawings. Can anyone give me advice of what to ask for as far as the format of the model I receive?

I do not often work with organic shapes and want something that will be easy for me to manipulate. I would rather pay the agency to get it in the right format for my final "tune up".
