Violin top plate modelling - best procedure?

I'm a luthier, and I plan to model some parts - violn and cello top and back plates, fingerboard, bridges... - some parts are easy to model, but the plates are composed of compound surfaces, with many cross arches. Which is the tool I can use to produce such a models? I create some cross arches and some quote level as well. In Rhinoceros I know there's a loft functions that can create a surface using such quote levels, and I can produce a rail sweep selecting many cross arches and just the main contour. how can I achieve it in ViaCAD? Do someone knows how can I achieve that in ViaCAD? Thanks!
